- Large red beans that cook up soft and rich. Raw beans contain a toxin (lectin), so they must be boiled hard for at least 10 minutes.

- Substitutes
- Replace 1:1 with black or pinto beans.
- Storage
- Dried beans keep 1 year at room temperature. Soak 8 hours, boil on high heat for at least 10 minutes, then simmer on low heat for 1 hour. Do not cook them in a slow cooker alone.
