Flavor and role

A flavouring made by steeping vanilla beans in alcohol; it masks eggy or dairy notes and adds a sweet aroma. A few drops are enough.

Pavlova, clafoutis, cakes, cookies, custard

Substitutes

1 tsp vanilla extract = seeds of ⅓ vanilla bean or 1 tsp vanilla paste, or 1 tbsp vanilla sugar.

Storage

Tightly capped in a cool, dark place at room temperature, it keeps for years. No need to refrigerate.
