Flavor and role: A raising agent of baking soda mixed with an acid; with moisture and heat it releases carbon dioxide and lifts the batter. In frying batter it makes the coating light and crisp.
Typical dishes and uses: Fish and chips batter, pancakes, scones, muffins
Substitutes: 1 tsp baking powder = ¼ tsp baking soda + ½ tsp lemon juice or vinegar (use immediately).
Storage: Sealed in a dry place at room temperature, 6–12 months after opening. If it does not fizz in hot water, it has lost its strength.
