A cut with well-distributed fat that stays juicy even after long cooking. Collar (moksal) is good for grilling; picnic shoulder for stews and braises.

Substitutes

Pork belly (fattier), boneless chicken thighs (half the cooking time).

Storage

Refrigerate 2-3 days, freeze 4-6 months.
