Flavor and role

Thin, round flatbreads made from corn treated with limewater (masa). They have a toasty corn aroma and are usually 12-15cm across.

Typical dishes and uses

Tacos (carnitas, al pastor), tostadas (fried) and with pozole, enchiladas, nachos.

Substitutes

Flour tortillas 1:1 (different taste and texture). Failing that, make dough from masa harina and water and cook your own.

Storage

After opening, refrigerate 1-2 weeks. Frozen with paper between them, they keep 3 months. Warm in a dry pan so they do not tear.
