Flavor and role: Finely ground white sugar with a little starch added. It dissolves easily and is used for icing and decoration.
Typical dishes and uses: Dusting clafoutis, icing, whipped cream, macarons
Substitutes: 1 cup icing sugar = 1 cup white sugar + 1 tbsp cornflour, blended until fine.
Storage: Airtight at dry room temperature, indefinitely. Sift out any lumps before use.
