- A strongly aromatic, crunchy stalk vegetable that gives depth to broths and sauces.
- Typical dishes and uses
- Bolognese and mirepoix (onion:carrot:celery 2:1:1), soups, stock, Cajun dishes.
- Substitutes
- Celeriac, a little celery seed, fennel stalks. Failing that, leave it out and add a bit more onion.
- Storage
- Wrap in plastic wrap or foil and refrigerate 2 weeks. Limp stalks revive in cold water.
