- A Greek cheese made from sheep's milk (or sheep and goat's milk) and matured in brine. Salty, tangy and crumbly.
- Typical dishes and uses
- Greek salad, spanakopita, with souvlaki, baked feta pasta
- Substitutes
- For the crumbly, salty taste, use cottage cheese + salt, or Turkish beyaz peynir.
- Storage
- Keep submerged in brine and refrigerate 2-4 weeks. If too salty, soak in water for 10 minutes before use.
