Flavor and role

Moderately hot green chilies, crunchy and fresh-tasting. Removing the seeds and white pith makes them milder.

Typical dishes and uses

Guacamole, salsa, white chicken chili, ceviche, nacho topping.

Substitutes

1/2 Korean cheongyang chili (hotter; or serrano) or 1 mild green chili + a little chili flakes.

Storage

Refrigerate 1-2 weeks. Frozen whole, they keep 6 months. After handling, do not touch your eyes.
