- Chili powder from the Kashmir region of India; mild in heat with a very vivid red colour. It is mainly used to give Indian dishes their red hue.

- Butter chicken, tandoori chicken, rogan josh, vindaloo. In this book: butter chicken.
- Substitutes
- 1 tsp Kashmiri chili = ¾ tsp paprika + ¼ tsp cayenne pepper. Fine Korean chili powder (gochugaru) also works well in the same amount.
- Storage
- Light and heat quickly dull the colour and aroma. Sealed and refrigerated or frozen, it keeps its bright colour and aroma for about 1 year.
