Korean chili flakes (gochugaru)
gochugaru 고춧가루
- Flavor and role
- Ground red chilies dried in the sun or with hot air; medium heat with sweetness and a vivid red colour. Coarse flakes are for kimchi and dressed dishes, fine powder for gochujang and seasoning pastes.
- Typical dishes and uses
- Kimchi, kimchi jjigae, yukgaejang (spicy beef soup), tteokbokki, all kinds of dressed dishes and seasoning sauces. In this book: kimchi jjigae and menemen (instead of pul biber).
- Substitutes
- 1 tbsp gochugaru = 2 tsp paprika + ½ tsp cayenne pepper (for colour and heat). Aleppo pepper (pul biber) is the closest.
- Storage
- Light and heat quickly dull the colour and aroma. Sealed and refrigerated or frozen, it keeps its bright colour and aroma for about 1 year.
