An aged cheese originating in England; the longer it ages, the richer and sharper it gets. Melts well, good for baking and sauces.

Minced beef and cheese pie, mac and cheese, cheese on toast, white chicken chili

Substitutes

Replace 1:1 with Gouda or Monterey Jack.

Storage

Wrap a block in plastic wrap and refrigerate 3-4 weeks; grated cheese freezes for 3 months.
