Flavor and role

Tiny oily seeds whose nutty aroma comes alive when toasted. There are white and black sesame seeds; black ones are richer.

Typical dishes and uses

Bulgogi, seasoned namul, gimbap, simit and bagel topping, Japanese goma-ae

Substitutes

Replace 1:1 with toasted perilla seeds (different aroma) or a small amount of chopped peanuts.

Storage

Toasted seeds keep 1-2 months sealed at room temperature, 6 months or more refrigerated or frozen. Re-toast in a dry pan for 1-2 minutes just before use to revive the aroma.
