Solidified milk fat that gives a rich, nutty flavor. Its milk solids burn easily at around 150°C, so use it over medium-low heat.

Substitutes

For sauteing, 10 g butter = 2 tsp vegetable oil + a little butter; for high heat, switch to ghee. Baking assumes unsalted butter; if you use salted, reduce the salt in the recipe.

Storage

Refrigerate 1-2 months (per the package date), freeze 6 months or more. It absorbs odors easily, so keep it sealed.
