Onion

Flavor and role

Cooked, they release sweetness and savoriness and form the flavor base of almost every dish. Raw, they are sharp and crunchy.

Typical dishes and uses

Curry, bolognese (soffritto), butter chicken, biryani (fried onions), soups, all kinds of stir-fries.

Substitutes

1 medium onion (200 g) = 4-5 shallots or the white parts of 2 Korean leeks (daepa). In a pinch, 1 tsp onion powder = 1/4 raw onion.

Storage

Whole onions keep 1-2 months in a cool, dark, well-ventilated place (away from potatoes). Cut onions keep 5-7 days sealed in the fridge.
